I have been needing to fit more greens into my day and a girl can only drink so many smoothies so one day I just grabbed a big handful of spinach and plopped it onto a tortilla. I looked at it and wondered what else to put with it. I had some Trader Joe’s tuna to use up so I dolloped some of that on there too. It still needed a little something so I sprinkled some shredded cheddar on it and BAM, my new favorite lunch has been on repeat ever since!

I was very late to the tuna melt game; fish and cheese just don’t naturally sound like they would go together but oh man, how they do! The tuna is a great protein source alternative to red meats or chicken and is a good source of important omega-3s. The spinach is a great source of fiber, protein, potassium, antioxidants, calcium, and so much more. (The taste of spinach is very mild for people that are not the fondest of greens.) The carbs in the tortilla are a little out of my norm so maybe in time I can track down a similar, lower carb option. But for now, this lunch is such an easy, peasy one to enjoy again and again.
