
In case you haven’t heard, IT’S OFFICIALLY PUMPKIN SEASON!! I have to be honest, I am not a Pumpkin Spice Latte fan. Thank goodness Starbucks crafted the Pumpkin Cream Cold Brew that actually tastes amazing! Before that, I used to have to settle on just the pumpkin scone or pumpkin loaf slice to get my fall flavor fix in. But these days my family and I tend to avoid anything too sugary. And Starbucks is the first to tell you, their offerings usually all have sugar. A lot.

Luckily, I discovered Simple Mills almond flour baking mix for Pumpkin Muffin & Bread. Their mix is gluten -free, plant based, non GMO, and has impressive nutrition facts:

And the best part is you do not have to sacrifice taste on this one AT ALL! I follow the box’s recommendation to sprinkle some raw green pumpkin seeds and chopped pecans on top and these muffins might just be better than anything you can find elsewhere. They truly are next level. You will have people thinking you are secretly a master baker! And the mix could not be easier. All you add is 3 eggs, 1/2 cup of water, and 1/3 cup of oil. (I use olive oil.) I bake them in a muffin pan sprayed with coconut oil for 15-20 minutes. They have to set and cool for just a bit first but they are heaven when eaten warm from the oven. And because they do not have any preservatives, you need to store the uneaten muffins in the refrigerator.
